Grilled Salmon Caesar Salad

Regal salmon salad, served hot or cold.
Ingredients:
  • 1 salmon fillet (1 lb)
  • 1/2 cup Caesar dressing
  • 1 bag (10 oz) torn romaine lettuce (6 cups)
  • 1/2 cup Caesar-flavored croutons
  • 1/4 cup sliced ripe olives
  • 1/4 cup shredded fresh Parmesan cheese (1 oz)
Instructions:
  • Preheat gas or charcoal grill. Place salmon, skin side down, on grill over medium heat. Brush fish with 1 tablespoon of dressing. Grill covered for 9 to 11 minutes until fish is opaque and flakes easily with a fork.
  • In a large bowl, mix together lettuce, croutons, and olives. Pour the rest of the dressing over the salad and toss gently to coat. Transfer the salad onto a large platter. Remove the skin from the salmon and flake it. Arrange the salmon on top of the salad and sprinkle with cheese.
