Grilled salmon and bacon sandwich with dill-lemon mayo.
Ingredients:
  • 4 slices bacon
  • 1 (1 pound) fillet salmon, cut into 2 portions
  • 1 tablespoon olive oil
  • 0.33333334326744 cup mayonnaise
  • 1 teaspoon dried dill weed
  • 1 teaspoon freshly grated lemon zest
  • 4 slices country-style bread, toasted
  • 4 slices tomato
  • 2 green leaf lettuce leaves
Instructions:
  • Fry the bacon in a spacious skillet on medium-high heat until perfectly browned, around 10 minutes. Place the cooked bacon slices on a plate lined with paper towels to drain.
  • Preheat your outdoor grill until it's nice and hot on medium-high heat, then lightly oil the grate. Make sure to evenly coat the salmon with the delicious olive oil. Enjoy the aromas sizzling from the grill!
  • Grill the salmon skin side down for 5 minutes, then flip and cook until skin can be lifted off easily, about 5 more minutes. Flip again and cook until salmon flakes easily with a fork, about 2 to 3 more minutes.
  • Combine mayonnaise, dill, and lemon zest in a small bowl. Spread mixture on 2 slices of toasted bread. Layer each with cooked salmon, tomato slices, bacon slices, lettuce leaf, and another slice of toasted bread.
