Elevate your salmon salad sandwich with grilled onions, avocado, and baby spinach - a mouthwatering lunch for two.
Ingredients:
  • 1 (6 ounce) can pink salmon, drained
  • 0.5 cup Greek yogurt
  • 0.25 cup chopped celery
  • 1 tablespoon Dijon mustard
  • 0.5 teaspoon lemon juice
  • 0.25 teaspoon garlic powder
  • 0.125 teaspoon salt
  • 1 pinch paprika, or to taste
  • 1 onion, halved, divided
  • 4 slices gluten-free bread slices, toasted
  • 0.5 avocado, sliced, or to taste
  • 1 cup baby spinach leaves
Instructions:
  • In a medium bowl, mix together the salmon, Greek yogurt, celery, mustard, lemon juice, garlic powder, salt, pepper, and paprika.
  • Preheat your outdoor grill to medium heat and lightly oil the grate. Grill 1 onion half until tender and slightly caramelized, about 5 to 7 minutes on each side. Once done, take the onion off the grill and slice once it has cooled down a bit.
  • Lavishly layer each slice of bread with flavorful salmon salad, then top with grilled onions, creamy avocado, and fresh baby spinach.
