Elevate grilled salmon with a tangy blueberry balsamic sauce for a delightful summer meal.
Ingredients:
  • 0.5 cup chicken stock
  • 0.25 cup balsamic vinegar
  • 0.25 cup orange juice
  • 1 teaspoon honey
  • 0.25 cup chicken stock
  • 1 cup fresh blueberries
  • 2 teaspoons chopped fresh chives
  • 4 (6 ounce) salmon steaks
  • 2 tablespoons olive oil
  • salt and pepper to taste
Instructions:
  • In a saucepan, combine 1/2 cup chicken stock, vinegar, orange juice, and honey. Bring to a boil over high heat, then reduce to medium. Dissolve cornstarch in 1/4 cup chicken stock, then stir into the sauce. Cook until thickened and clear, about 1 to 2 minutes. Add blueberries and chives, and keep warm over low heat.
  • Heat up the grill to medium high heat.
  • Coat salmon with oil and generously season with salt and pepper. Grill until flaky, approximately 3 to 4 minutes per side. Present with a side of delicious blueberry sauce.
