Savor citrus salsa on grilled salmon with a corn and pepper twist for a delectable dinner.
Ingredients:
  • 1/2 teaspoon grated lime peel
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1 medium Italian plum tomato, chopped
  • 1/4 cup chopped green onions
  • 1 jalapeño chile, seeded, chopped
  • 1 (11-oz.) can whole kernel corn, red and green peppers, drained
  • 2 lb. salmon fillets, cut into 6 pieces
  • 2 teaspoons olive oil
  • 1 teaspoon seasoned salt
Instructions:
  • Preheat the grill. In a medium bowl, whisk together lime zest, lime juice, and honey. Add in tomatoes, onions, chili, and corn.
  • Coat the salmon with oil on both sides and place skin side down on a preheated medium gas or charcoal grill. Sprinkle with seasoned salt and grill for 15 to 18 minutes until salmon is cooked through and flakes easily. Serve with salsa on the side.
