"Grilled salmon with bacon and sweet corn relish - a fresh summer twist on a classic dish."
Ingredients:
  • 6 slices bacon, cut crosswise into 1/2-inch pieces
  • 2 ears white corn
  • 0.25 cup chopped green onions - white and light green parts separated from green tops
  • 0.25 cup diced red bell pepper
  • 1 pinch cayenne pepper, or to taste
  • 2 teaspoons olive oil
  • 1 tablespoon rice vinegar, or more to taste
  • 0.5 teaspoon vegetable oil
  • 2 (8 ounce) center-cut boneless salmon fillets
  • 1 cup fresh spinach leaves
Instructions:
  • Heat up your charcoal grill until it's nice and hot, then give the grate a light coating of oil.
  • Crisp up the bacon in a skillet over medium heat for 8 to 10 minutes.
  • Cut corn kernels into a large bowl using a sharp knife at a 45-degree angle. Scrape cobs using the back of the knife to collect the juices in the bowl.
  • Mix the white and light green parts of green onions with bacon, then toss in red bell pepper. Cook until veggies start to soften, approximately 2 minutes. Add corn to the bacon mix and heat it through. Season with salt, black pepper, cayenne pepper, dark green onion tops, olive oil, and rice vinegar. Take off the heat and enjoy your relish.
  • Coat both sides of salmon fillets with vegetable oil, then season with salt, black pepper, and cayenne pepper for a flavorful kick.
  • Grill the salmon until it develops nice grill marks, the flesh easily flakes, and the center remains slightly pink, about 5 minutes per side. Keep an eye out for a crack that forms in the flesh to check for doneness in the middle.
  • Separate spinach leaves onto 2 plates. Place a salmon fillet on each plate, followed by half of the bacon relish. Garnish with a sprinkle of green onion tops.
