Grill salmon fearlessly by wrapping it in crispy, flavorful bacon to prevent sticking.
Ingredients:
  • For the lemon garlic mayo
  • 1 lemon
  • 1 1/2 cups (150g) mayonnaise
  • 1 or 2 cloves garlic, finely minced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • For the salmon bites
  • 1 1/3 pounds (600g) skinless salmon filet, at least 1 inch thick
  • 2 tablespoons finely chopped chives
  • 1/2 teaspoon freshly ground black pepper
  • 12 slices very thin bacon
  • 2 teaspoons smoked paprika (optional)
  • Special equipment
  • 24 small metal skewers or wooden toothpicks
Instructions:
  • Prepare the grill for direct and indirect grilling: On a charcoal grill, arrange lit coals on one side and leave the other side empty. On a gas grill, ignite the burners on one side and leave the other side turned off. The side directly above the heat source provides direct heat, while the side away from the heat source offers indirect heat.
  • Create a flavorful lemon garlic mayo: In a small bowl, zest the lemon, then combine with mayonnaise, 1 or 2 cloves finely minced garlic, salt, and black pepper. Chill until ready to use.
  • Prepare the salmon by laying it on a cutting board and neatly slicing it into 12 uniform cubes, approximately 1 1/2 inches wide, using a sharp chef’s knife.
  • Sprinkle the reserved lemon juice, chives, salt, and black pepper over the salmon and toss to evenly coat, all right on the cutting board.
  • Wrap the salmon: Place one slice of bacon on the cutting board. Lay one piece of salmon at the end and wrap the bacon around it, overlapping slightly. Secure the bacon by piercing two cocktail skewers through the salmon. Repeat with the remaining salmon and bacon. For later grilling, refrigerate uncovered for a couple of hours.
  • Add a touch of smoky flavor: Sprinkle the smoked paprika evenly over the salmon bites just before cooking, if desired.
  • Preheat the grill. Scrub the grill bars with a wire grill brush. Place the bacon-wrapped salmon bites on the grill directly over the fire. Cook for 2 to 3 minutes until the bacon is crispy. Flip the salmon bites using a fish spatula and cook for an additional 2 to 3 minutes.
  • Complete cooking the salmon bites: After the bacon becomes crisp, move the cubes to a cooler section of the grill. Cover with the lid and cook for 5 minutes until the salmon is fully cooked. Use a thermometer to ensure the internal temperature reaches 140°F. Adjust the cooking time based on the grill's heat level.
