Ingredients:
  • Olive oil spray
  • 4 x 175g salmon fillets with skin
  • 1 large green capsicum, chopped
  • 2 Lebanese cucumbers, chopped
  • 3 ripe tomatoes, chopped
  • 1 small red onion, finely chopped
  • 40.00 ml roughly chopped flat-leaf parsley
  • 2 pita bread rounds, toasted, torn into bite-sized pieces
  • 27.30 gm extra virgin olive oil
  • 30.00 ml white wine vinegar
Instructions:
  • Preheat a chargrill pan or non-stick frypan over medium-high heat with a light coating of oil. Season the fish and cook skin-side down for 4 minutes until crispy. Flip and cook for 2-3 minutes until just pink in the center. Rest the fish covered with foil while preparing the salad.
  • Combine the remaining ingredients in a bowl, season well, toss gently to mix, and serve immediately with the salmon.
