Grilled salmon with green-olive butter on couscous

Elevate salmon with a flavorful olive butter sauce for a delicious family-friendly meal.
Ingredients:
  • 380g (2 cups) couscous
  • 20g butter
  • 500ml (2 cups) boiling water
  • 1 red onion, halved, finely chopped
  • 82.50 ml firmly packed coarsely chopped fresh continental parsley
  • 2 tsp finely grated lemon rind
  • Pinch of salt
  • 4 (about 160g each, 2cm thick) salmon fillets
  • 125g butter, extra, cubed
  • 85g (1/2 cup) green olives, pitted, finely chopped
  • 1 garlic clove, crushed
  • Lemon wedges, to serve
Instructions:
  • In a medium heatproof bowl, combine couscous and butter. Pour boiling water over the mixture while gently stirring with a fork. Cover and let it sit for 5 minutes until all the liquid is absorbed. Fluff the couscous with a fork and mix in onion, parsley, lemon rind, and salt until well combined.
  • Preheat the chargrill on high until sizzling hot. Cook the salmon for 3 minutes on each side for a perfect medium doneness, then set aside and tent with aluminum foil to stay warm.
  • In a small saucepan over medium heat, melt the additional butter until it foams. Take it off the heat and mix in the olive oil and garlic until well combined.
  • Divide the couscous onto plates. Arrange the salmon on top and drizzle with the green-olive butter. Serve promptly with lemon wedges, if desired.
