Brighten up dinner with a quick and vibrant salsa from Betty Crocker's cookbook.
Ingredients:
  • 2 lb salmon fillets
  • 1/2 cup lemon juice
  • 4 medium nectarines, chopped
  • 1/2 cup chopped fresh cilantro
  • 2 teaspoons chopped jalapeño chiles
Instructions:
  • Preheat the gas or charcoal grill. Arrange the salmon, skin sides down, in an ungreased 11x7-inch (2-quart) glass baking dish. Drizzle 1/4 cup of lemon juice over the salmon.
  • Take the salmon out of the baking dish and place it skin side down on a medium heat grill. Cover and grill for 10 to 20 minutes until the salmon can easily be flaked with a fork.
  • Combine 1/4 cup lemon juice with the remaining ingredients in a medium glass or plastic bowl. Serve the nectarine salsa over the salmon.
