Grilled salmon topped with peach-avocado salsa stays crispy with a grill pan. Delicious combo!
Ingredients:
  • For the salmon:
  • 1 1/2 teaspoons smoked paprika
  • 1 1/2 teaspoons granulated garlic
  • 1 1/2 teaspoons granulated onion
  • 1 teaspoon light brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pinch of cayenne (optional)
  • 1 pound skin-on salmon filets (about 4 pieces)
  • 2 to 3 tablespoons neutral cooking oil, such as grapeseed, avocado, or canola oil
  • For the salsa:
  • 2 heaping cups diced peaches, unpeeled (about 3 medium peaches)
  • 1 medium ripe avocado, diced
  • 1/4 cup finely diced red onion
  • 1/4 cup chopped cilantro
  • 2 tablespoons finely minced jalapeño (optional)
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt
  • To serve:
  • Jalapeño slices
  • Cilantro slices
Instructions:
  • Prepare the salmon: Combine paprika, garlic, onion, brown sugar, salt, pepper, and cayenne in a bowl. Coat the salmon evenly with the spice mixture. Let it sit in the fridge, uncovered, for 20 minutes while you prepare the salsa and heat up the grill.
  • Create a flavorful salsa by combining peaches, avocado, onion, cilantro, jalapeño, lemon juice, and salt in a bowl. Adjust seasoning with extra salt or jalapeño to suit your taste. For slightly tart peaches, sprinkle in a pinch of sugar.
  • Prepare the grill: Preheat gas or charcoal grill to 500°F for at least 15 minutes, or until you can feel the heat when holding your hand above the grates for 2 to 3 seconds.
  • Prepare the grill: Brush a total of about a tablespoon of oil all over the salmon and lightly oil the grill grates. Place the salmon skin side up on the grill pan and grill with the lid closed for 2 to 3 minutes. Check for sear marks and flip the salmon skin side down. Continue grilling with the lid closed for another 3 to 4 minutes until the salmon is opaque with a translucent streak in the center. Adjust cooking time based on your preferred level of doneness.
  • Serve immediately by taking it off the grill. Top with peach salsa, cilantro, and chilies for a vibrant and flavorful finish.
