Grilled pineapple and shrimp foil packets - a taste of the tropics for effortless summer dining.
Ingredients:
  • 1 pound frozen peeled and deveined medium shrimp, thawed
  • aluminum foil cut into large squares
  • 1 (16 ounce) bag frozen mango chunks
  • 1.5 cups frozen pineapple chunks
  • 2 onions, sliced
  • 2 tomatoes, cut into wedges
  • 2 tablespoons olive oil, or as needed
  • 2 tablespoons Worcestershire sauce, or to taste
  • 0.5 teaspoon lemon-pepper seasoning, or to taste
  • 0.5 teaspoon garlic powder, or to taste
  • salt to taste
Instructions:
  • Get ready to cook up a storm by preheating your outdoor grill until it reaches medium heat, then give the grate a light coating of oil.
  • Arrange 5 to 6 shrimp in the center of a foil square. Top with mango, pineapple, onion, and tomato. Drizzle with olive oil and Worcestershire sauce, then season with lemon-pepper, garlic powder, and salt. Seal into a packet and flip onto another foil sheet.
  • Start by laying the foil packets with the folded side down on the hot grill. Grill for 10 to 15 minutes, then flip them over so the folded side faces up. Keep grilling until the shrimp turn pink and the onions soften, for another 10 to 15 minutes.
