Grill Greek-seasoned meatballs on metal skewers for easy, flavorful perfection. No more chasing runaway meatballs on the grill!
Ingredients:
  • 1/2 teaspoon baking soda
  • 2 tablespoons lemon juice
  • 1 pound ground chuck (80/20)
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon dried dill
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon ground cinnamon
  • 1 clove garlic, grated
  • 1 large egg, beaten
  • 1/3 cup panko breadcrumbs
  • 1 teaspoon olive oil, for brushing on the meatballs
  • 1 tablespoon chopped fresh Italian parsley, for garnish
Instructions:
  • Enhance the flavor of the meat: Combine baking soda and lemon juice in a bowl. Add the meat and mix well. In another bowl, combine salt, oregano, dill, pepper, cinnamon, garlic, egg, and panko. Mix the seasonings with the meat until fully combined using your hands.
  • Shape the meat mixture into 12 uniform balls that are 1 1/2 inches in diameter each. Arrange them on a sheet pan, cover with plastic wrap, and refrigerate for at least 1 hour.
  • Preheat the grill to reach a temperature of 375 to 425°F for direct medium heat.
  • Thread 3 meatballs onto flat grilling skewers, leaving space between each one. Lightly brush the skewers with olive oil using a basting brush.
  • Prepare the grill: Clean the cooking grates with a grill brush. Grill the meatball skewers over direct heat with the lid closed, flipping once, until the internal temperature reaches 155ºF (8 to 14 minutes).
