Grilled chicken breasts stuffed with savory onions, bell peppers, and garlic - perfect for quick and flavorful weeknight dinners.
Ingredients:
  • 2 skinless, boneless chicken breasts
  • 1 medium green bell pepper, diced
  • 1 small onion, diced
  • 1 pinch salt and ground black pepper to taste
  • 2 tablespoons olive oil, or to taste
Instructions:
  • Heat up your grill outdoors to 400 degrees F (200 degrees C) and brush the grate lightly with oil.
  • Combine bell pepper, onion, and garlic in a small bowl and season with salt and pepper, stirring until well mixed.
  • Place the chicken breast on a flat surface and carefully cut a pocket into each breast using a sharp knife. Fill the chicken breasts with the vegetable mixture, distributing it evenly among them.
  • Grill the chicken until the bottom is cooked, approximately 10 minutes. Flip, brush with olive oil, and grill until no longer pink and juices run clear, about an additional 10 minutes.
