Transform grilled potato slices into a decadent dessert by topping them with a scoop of ice cream.
Ingredients:
  • 3 pounds sweet potatoes or yams
  • 1/3 cup butter or margarine, melted
  • Coconut, toasted, if desired
Instructions:
  • Prepare your grill by heating the coals or gas for direct heat.
  • Peel and slice sweet potatoes. Boil salted water in a saucepan, add sweet potatoes, cover, and simmer for about 12 minutes until almost tender. Drain and mix with butter and salt.
  • Grill sweet potato slices on medium heat, brushing with butter mixture and turning occasionally, until tender, about 20 minutes.
  • Sprinkle sweet potatoes with a generous amount of shredded coconut before serving.
