Grill swordfish steaks with flavorful marinade of olive oil, lemon juice, oregano, and thyme for a mouthwatering dinner.
Ingredients:
  • Marinade ingredients:
  • 1/2 cup extra virgin olive oil
  • 1 1/2 tablespoons lemon juice
  • 2 teaspoons minced fresh oregano
  • 2 teaspoons minced fresh thyme
  • 2 large cloves garlic, crushed
  • 1 teaspoon lemon zest
  • 1 teaspoon dried oregano
  • 1 teaspoon fennel seeds, crushed
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • Fish:
  • 2 6-8-ounce swordfish steaks
  • Olive oil for grill grates
  • Slices of fresh lemon for garnish
Instructions:
  • Create the marinade by assembling all ingredients in a small bowl and blending them together.
  • Prepare the swordfish for marinating: Rinse the swordfish steaks under cold water and gently pat them dry, leaving the skin intact to help maintain the steaks' shape while grilling. Transfer the fish to a non-reactive dish and thoroughly coat all sides with the marinade. Cover and refrigerate for 30 minutes to 1 hour.
  • Preheat the grill until it reaches high direct heat. Test it by holding your hand 1 inch above the grates - you should only be able to keep it there for 1 second. Rub olive oil on the grates using a paper towel to prevent sticking when cooking the swordfish steaks.
  • Prepare the swordfish: Remove most of the excess marinade from the swordfish steaks. Grill the steaks on hot grill grates for 5 to 7 minutes until well-marked. Flip and grill a few more minutes until cooked through. Rest briefly, then serve with fresh lemon slices.
