Grilled teriyaki chicken skewers marinated in homemade sauce.
Ingredients:
  • 0.5 cup water
  • 2.5 tablespoons brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin (Japanese sweet wine)
  • 2 teaspoons agave nectar
  • 1 large garlic clove, finely minced
  • 0.5 teaspoon freshly grated ginger
  • 1 tablespoon tapioca flour
  • 2 tablespoons cold water
  • 1.25 pounds skinless, boneless chicken thighs, cut into strips
Instructions:
  • In a saucepan over medium heat, blend water, brown sugar, soy sauce, mirin, agave, garlic, and ginger. In a bowl, mix tapioca flour with 2 tablespoons of water until smooth. Stir this mixture into the teriyaki sauce in the saucepan.
  • Simmer the sauce to achieve your preferred thickness, adjusting with water if needed.
  • Take the sauce off the heat and set aside 1/4 cup for basting. Mix the rest of the sauce with the chicken in a bowl and refrigerate for 1 hour.
  • Skewer the chicken strips for a delightful presentation.
  • Preheat your outdoor grill until it sizzles, then lightly oil the grate. Grill the chicken skewers for 3 minutes on each side, brushing them with the tasty teriyaki sauce you set aside.
