Indulge in the ultimate tomato sandwich with warm feta, juicy tomatoes, and perfectly toasted bread.
Ingredients:
  • 2 tablespoons mayonnaise
  • 0.5 cup crumbled feta cheese
  • 1 teaspoon lemon zest
  • 4 slices sourdough bread
  • 1 large ripe tomato, thinly sliced
  • 0.25 teaspoon kosher salt
  • 0.5 teaspoon ground black pepper
  • 4 teaspoons olive oil
Instructions:
  • Combine creamy mayonnaise, tangy feta cheese, and zesty lemon zest in a small bowl until fully mixed. Generously spread the flavorful feta mixture over the bread slices.
  • Evenly layer tomato slices on 2 slices of bread and season with salt and pepper. Place the remaining bread slices on top, with the feta facing down. Brush both sides of the sandwich evenly with olive oil.
  • Preheat a large skillet over medium heat. Cook sandwiches until golden brown on one side, about 3 minutes. Flip and toast the other side until golden, about 3 minutes more. Serve hot.
