Fire up the grill for succulent tuna skewers with marinated veggies.
Ingredients:
  • 1 1/2 pounds tuna, swordfish or sturgeon steaks
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 small onion (sweet if available)
  • 6-10 large button mushrooms
  • 2 lemons, cut into wedges
  • Marinade Ingredients
  • 1/2 cup extra virgin olive oil
  • 2 tablespoon chopped onion
  • 1 tablespoon chopped fresh rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic
Instructions:
  • Dice the tuna and vegetables into bite-sized pieces to ensure even cooking on the grill.
  • Create the marinade by blending the onion, rosemary, garlic, salt, and pepper in a food processor. Slowly add the olive oil as you blend, until the mixture becomes smooth, which should take about 1 to 2 minutes.
  • Infuse flavor into the fish and vegetables: Generously cover the fish and veggies with the marinade. Refrigerate for at least 1 hour, or overnight for maximum taste.
  • Skewer the fish and vegetables: Pierce the fish against the grain and select veggies close in size to the fish. Alternate fish and veggies, leaving space between each piece. Start with onions and bell peppers for longer cooking. Avoid overcrowding to ensure even cooking. For precise cooking, use separate skewers for each ingredient.
  • Preheat grill on high heat. Clean and oil the grates. Place skewers on the grill and cook until fish is browned, about 3 to 6 minutes. Flip skewers and sear the other side. Serve hot or at room temperature with lemon juice or wedges.
