Grilled Zesty Lemon Spareribs

Grilled lemonade ribs with tangy barbecue sauce.
Ingredients:
  • 6 pounds pork spareribs, cut into serving pieces
  • 1 cup ketchup
  • 1/2 cup chili sauce
  • 1/2 cup packed brown sugar
  • 2 tablespoons cider vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon liquid smoke
  • 1 can (6 ounces) frozen lemonade concentrate, thawed
Instructions:
  • Place the pork in a 4-quart Dutch oven and cover it with water. Bring it to a boil, then reduce the heat to low, cover, and simmer for around 1 hour 30 minutes until the pork is tender.
  • In a 2-quart saucepan, bring together ketchup, chili sauce, brown sugar, vinegar, lemon juice, and liquid smoke. Let it come to a boil, then lower the heat and simmer uncovered for 10 minutes, stirring occasionally. Take it off the heat and mix in the lemonade concentrate. Set aside.
  • Place the pork in a 13x9x2 inch rectangular baking dish or a resealable food-storage plastic bag. Pour the marinade over the pork and ensure the pork is fully coated. Cover the dish or seal the bag and refrigerate for at least 4 hours, making sure to turn the pork occasionally, but do not exceed 24 hours of marinating time.
  • Prepare your grill, then take the pork out of the marinade, saving the marinade. Grill the pork with the meaty side facing up, uncovered, about 4 inches from the heat for roughly 30 minutes. Remember to flip the pork and coat it often with the marinade until it turns glossy and is heated through. Dispose of any leftover marinade.
