Savory grilled zucchini with Parmesan-garlic butter is a perfect summer side dish, complementing grilled fish, meat, or chicken.
Ingredients:
  • 3 zucchini
  • 3 tablespoons butter, softened
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley
  • 0.5 cup freshly grated Parmesan cheese
Instructions:
  • Get your outdoor grill fired up to the perfect medium-high heat, and give the grate a light coating of oil.
  • Cut the zucchini in half crosswise, then slice each half lengthwise into 3 slices to make 6 slices per zucchini.
  • Combine butter, garlic, and parsley in a bowl. Smear the mixture on both sides of each zucchini slice. Sprinkle Parmesan cheese on one side of each slice. Grill the zucchini slices with cheese side up to prevent them from falling through the grill.
  • Grill the zucchini for about 8 minutes until the cheese is melted, the slices are cooked through, and they have beautiful grill marks.
