Flavorful Indian-inspired rice and beef bowl that rivals authentic cuisine.
Ingredients:
  • 1 1/2 cups uncooked regular long-grain white rice
  • 1 lb lean (at least 80%) ground beef
  • 1 small onion, chopped (1/4 cup)
  • 1 clove garlic, finely chopped
  • 2 tablespoons grated gingerroot (about 3 inches)
  • 1 tablespoon tomato paste
  • 1 teaspoon salt
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon garam masala
  • 2 cans (14.5 oz each) diced tomatoes, undrained
  • 3 tablespoons chopped fresh cilantro
Instructions:
  • Prepare rice following the instructions on the package.
  • In a 12-inch skillet, sauté beef, onion, garlic, and gingerroot over medium-high heat for 5 to 7 minutes, stirring occasionally, until the beef is fully cooked. Drain excess liquid if preferred.
  • Combine the rest of the ingredients, excluding cilantro, with the beef mixture. Lower the heat to medium and let it simmer without covering for 8 to 10 minutes, stirring occasionally, until it slightly thickens.
  • Serve the flavorful beef mixture over a bed of fluffy rice and top with fresh cilantro for a burst of flavor.
