Spicy beef and cheese casserole is a guaranteed hit.
Ingredients:
  • 8 (6 inch) corn tortillas
  • 1 small onion, diced
  • 1 pound processed cheese food, shredded
  • 1 (4 ounce) can green chile peppers, chopped
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 0.5 cup milk
Instructions:
  • Preheat your oven to 325°F (165°C) and grease a medium casserole dish.
  • Brown the ground beef in a skillet over medium heat, then drain any excess fat.
  • Layer half of the tortillas in the casserole dish, then spread half of the onion, cheese, ground beef, and chiles. Add the remaining tortillas, onion, half of the cheese, ground beef, and chiles on top.
  • Mix the soup with milk in a bowl and pour over the casserole. Bake for 30 minutes in a preheated oven. Sprinkle with the remaining cheese and bake for an additional 5 to 10 minutes until melted.
