Elevate a classic bread loaf with spooky ground beef, pepper strips, cheese, and olives for a ghoulish twist.
Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1 medium green bell pepper, cut into bite-size strips
  • 1 medium red bell pepper, cut into bite-size strips
  • 1 small onion, cut into thin wedges
  • 1/2 cup creamy Italian dressing
  • 1 loaf (1 lb) Italian bread (12 inches long), halved lengthwise
  • 4 slices (6 oz) thinly sliced provolone cheese, quartered
Instructions:
  • Preheat the broiler. In a large nonstick skillet, sauté beef, bell peppers, and onion over medium-high heat for 5 to 7 minutes, stirring often, until the beef is fully cooked; then drain any excess liquid. Mix in 1/4 cup of the dressing.
  • Brush the remaining 1/4 cup dressing onto the cut sides of the bread and place them, cut sides up, on a large ungreased cookie sheet. Broil with the tops 4 to 6 inches from the heat for 2 to 4 minutes until lightly toasted. Remove the bread from the broiler and evenly spread the beef mixture on the cut halves of the bread. Top with cheese.
  • Place the dish back under the broiler, positioning it 4 to 6 inches away from the heat source. Broil for 2 to 3 minutes, or until the cheese is beautifully melted. Slice each half into 2 pieces before serving.
