Elevate traditional meatloaf with juicy ground bison, crunchy walnuts, and savory mushrooms, all wrapped in crispy bacon.
Ingredients:
  • 2 large eggs
  • 2 tablespoons minced fresh rosemary
  • 1 tablespoon minced garlic
  • 1 tablespoon Dijon mustard
  • 0.5 teaspoon salt, or to taste
  • 0.5 teaspoon freshly ground black pepper, or to taste
  • 0.25 teaspoon crushed red pepper flakes, or to taste
  • 1 cup diced white onion
  • 1 cup diced button mushrooms
  • 0.75 cup finely chopped red bell pepper
  • 0.67 cup finely chopped walnuts
  • 2 pounds ground bison
  • 3 slices reduced-sodium bacon
Instructions:
  • Preheat the oven to 375°F (190°C) for a perfect bake.
  • In a large bowl, vigorously mix together eggs, rosemary, garlic, Dijon mustard, salt, black pepper, and red pepper flakes until well blended.
  • Combine onion, mushrooms, bell pepper, and walnuts in the pan; stir until well mixed. Add ground bison and mix thoroughly.
  • Transfer the mixture onto a 9x13-inch metal baking pan and form it into a 9-inch long and 5-inch wide loaf.
  • Lay bacon strips on top of the meatloaf, securing the ends with toothpicks.
  • Roast in the oven until the juices run clear, typically around 1 hour, or until an instant-read thermometer registers at least 160°F (71°C) when inserted into the center.
  • Take out of the oven and let it rest, uncovered, for around 5 minutes. Gently move it onto a cutting board or serving platter.
  • Remove toothpicks and cut into 1/2-inch slices for serving.
