30-Minute Flavor-Packed Ground Turkey Stir Fry with Veggies and Savory Sauce.
Ingredients:
  • 2 tablespoons olive oil, divided
  • 2 cups sliced Baby Bella mushrooms
  • 1/2 red bell pepper, sliced
  • 1/2 green bell pepper, sliced
  • 1/2 small onion, peeled and vertically sliced
  • 1 pound ground turkey
  • 2 cloves garlic, minced
  • sliced green onions and toasted sesame seeds for garnish
Instructions:
  • Combine soy sauce, rice vinegar, lime juice, brown sugar, sesame oil, and cornstarch in a small bowl and whisk until well combined; set aside.
  • In a large skillet over medium heat, warm 1 tablespoon of oil. Add mushrooms, red and green bell peppers, and onion. Cook until vegetables are tender, about 5 to 6 minutes. Transfer to a plate.
  • Drizzle the last tablespoon of oil into the skillet. Cook the ground turkey, breaking it into chunks with a spatula until golden brown and cooked through, for 5 to 6 minutes. Add garlic and cook until aromatic, for about 30 seconds to 1 minute.
  • Lower the heat to medium-low, add the vegetables back to the skillet, stir the sauce well, then pour it over the meat and veggies. Mix everything until evenly coated, and simmer until the sauce slightly thickens, approximately 2 minutes.
  • Season to taste and garnish with green onions and sesame seeds before serving promptly.
