Quick and tasty ground turkey stir fry with mushrooms, carrots, celery, and spicy sauce - perfect for busy nights. Pair with your favorite rice.
Ingredients:
  • 3 tablespoons vegetable oil, divided
  • 8 cremini mushrooms, sliced
  • 3 green onions, white and green parts separated, thinly sliced
  • 3 carrots, peeled and thinly sliced diagonally
  • 3 celery stalks, thinly sliced diagonally
  • 1 pound lean ground turkey
  • salt and pepper, as needed
Instructions:
  • Combine soy sauce, honey, gochujang, sesame oil, and garlic in a small bowl and give it a good whisk; set aside.
  • In a wok or large skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add mushrooms, white parts of green onions, carrots, and celery. Stir-fry the veggies constantly until they are crisp-tender, about 4 to 6 minutes. Transfer to a bowl.
  • Heat the remaining vegetable oil in the wok until shimmering. Add the ground turkey and cook, stirring frequently and breaking up any large pieces, until beautifully browned, for about 5 to 6 minutes.
  • Add the vegetables back to the wok, pour the sauce over them, and gently stir to mix. Let it simmer for 2 to 3 minutes. Finish by adding the green parts of the green onions and season with salt and pepper to taste.
