Grown-up brownies with ice cream and hot fudge sauce

Gourmet amaretto brownies elevate your dessert game.
Ingredients:
  • 300g good-quality dark chocolate, plus extra shaved chocolate to serve
  • 175g unsalted butter, chopped
  • 4.40 gm vanilla extract
  • 80ml amaretto
  • 350g brown sugar
  • 3 eggs
  • 225g plain flour
  • 4.00 gm baking powder
  • 500ml vanilla or almond ice cream
  • 200g dark chocolate
  • 185ml evaporated milk
Instructions:
  • Preheat the oven to 170°C and grease 6 holes of a non-stick jumbo (Texas) muffin pan for baking.
  • Roughly chop 200g of chocolate and place in a heatproof bowl with butter, vanilla, and amaretto over simmering water. Stir until chocolate is melted. Remove from heat and mix in sugar. Add eggs one at a time, stirring well. Fold in flour, baking powder, and a pinch of salt. Finely chop the remaining 100g of chocolate and fold in. Divide the mixture into muffin holes and bake for 25 minutes until brownies start to crack on top and remain slightly moist in the center when tested with a skewer.
  • Let the brownies rest in the pan for 5 minutes to cool slightly. Gently loosen them by running a knife around the edges, then transfer them to a wire rack to cool completely.
  • In a saucepan, combine chocolate and milk over gentle heat. Stir continuously for 2-3 minutes until melted. Transfer to a bowl to cool. (The sauce can be prepared ahead and refrigerated for up to 5 days. Simply reheat in a pan over low heat when ready to use.)
  • Place a luscious brownie on each plate, crown it with a generous scoop of creamy ice cream, drizzle with sauce, and finish off with a decadent sprinkle of shaved chocolate.
