Indulge in gourmet, citrus-infused marshmallows - a sophisticated twist on childhood favorite Peeps for Easter.
Ingredients:
  • 1 serving cooking spray
  • 1.5 cups freshly squeezed lemon juice, divided
  • 4 (3 ounce) packages unflavored gelatin
  • 4.5 cups white sugar, divided
Instructions:
  • Prepare a large baking pan by lining it with aluminum foil and generously coating it with cooking spray. Then, coat both sides of a spatula with cooking spray and set it aside.
  • In a large mixing bowl, gently pour 3/4 cup of lemon juice. Sprinkle the gelatin evenly over the top without stirring. Allow the gelatin to set for about 15 minutes.
  • In a large saucepan over medium heat, mix together 3 cups of sugar and the remaining 3/4 cup of lemon juice. Stir until the sugar dissolves, which should take about 3 to 5 minutes. Increase the heat and bring the mixture to a low boil. Let it boil until it reaches 240 degrees F (115 degrees C) on a candy thermometer, which should take around 12 to 15 minutes. Remove from heat and if needed, temporarily take the saucepan off the heat to allow the bubbles to settle and check if the sugar has fully melted.
  • Gently add sugar mixture into the gelatin while using an electric mixer on low speed. Increase to medium-high and mix until batter ribbons from the beaters take 2 seconds to sink back into the bowl, about 10 to 15 minutes. Pour marshmallow batter into the pan, smooth with the sprayed spatula, and let it set uncovered for 3 hours to overnight.
  • Cover a large surface with the remaining sugar. Sprinkle some sugar on top of the marshmallow and spread it out. Gently remove the marshmallow from the pan and flip it onto the sugar-covered surface.
  • Cut marshmallows into your favorite shapes and coat all sides of the marshmallow pieces with sugar while you're at it.
