Delicious guava cupcakes with cream cheese frosting, a Cuban-inspired delight.
Ingredients:
  • 2 (8 ounce) jars guava paste
  • 1 cup brown sugar
  • 0.75 cup butter, softened
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 cup 100% guava nectar
  • 20 drops red food coloring, or as desired
  • 1 (8 ounce) package cream cheese, softened
  • 2 tablespoons butter, softened
  • 0.5 cup confectioners' sugar
  • 5 drops red food coloring, or as desired
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and place paper liners in 16 cupcake cups.
  • Dice the guava paste into medium-sized squares and transfer to a microwave-safe bowl. Microwave on high for 2 minutes. Stir vigorously until the paste is melted down but still has a slightly chunky texture, resembling jelly. Microwave for additional time if needed.
  • In a large bowl, use a mixer to blend brown sugar, butter, and eggs until creamy. Add flour, baking powder, vanilla extract, and salt, and mix until partially combined. Pour in guava nectar and mix until fully incorporated. Gently fold in heated guava paste until evenly mixed, then stir in red food coloring.
  • Divide the batter evenly among the cupcake cups.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Allow to cool completely before serving.
  • Once the cupcakes have cooled, use an electric mixer on low speed to blend cream cheese, butter, and vanilla extract until smooth. Mix in confectioners' sugar and red food coloring until fully blended. Chill the frosting for 10 to 15 minutes, then frost the cooled cupcakes.
