Flavorful red snapper with tomatoes, onions, lemon, and bacon fat for depth.
Ingredients:
  • cooking spray
  • 5 tablespoons bacon grease
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon brown sugar
  • 0.25 teaspoon dried thyme
  • 2 pounds red snapper fillets
  • 2 cups stewed tomatoes
  • 2 onions, chopped
  • 0.25 teaspoon Worcestershire sauce
  • 2 tablespoons chopped fresh parsley
Instructions:
  • In a bowl, whisk together bacon fat, lemon juice, garlic, salt, pepper, brown sugar, and thyme. Spread a thin layer of the bacon fat mixture on the bottom of a baking dish. Place snapper fillets in the dish and pour remaining bacon fat mixture over the fillets. Cover the dish with plastic wrap and refrigerate for 1 hour to marinate.
  • Preheat your oven to 350°F (175°C) and generously coat a baking dish with cooking spray.
  • Uncover baking dish and combine tomatoes, onions, and Worcestershire sauce.
  • Bake the fish in a preheated oven for 40 to 60 minutes until it flakes easily with a fork. Sprinkle with fresh parsley before serving.
