Spicy-sweet habanero honey corn cake with Mexican flair, perfect as a side or dessert.
Ingredients:
  • 2 cups fresh corn kernels
  • 1 habanero pepper, seeded and diced
  • 0.33 cup water
  • 0.33 cup honey
  • 0.67 cup all-purpose flour
  • 0.5 cup unsalted butter, melted
  • 0.33 cup cornmeal
  • 1 teaspoon kosher salt
  • 0.5 teaspoon baking powder
Instructions:
  • Collect all your ingredients. Preheat your oven to 350 degrees F (175 degrees C) and generously butter a 9-inch pie dish.
  • In a bowl, blend fresh corn kernels, habanero pepper, eggs, water, and honey with an immersion blender until nearly smooth.
  • Combine flour, melted butter, cornmeal, salt, and baking powder in a bowl and whisk until well mixed.
  • Pour the mixture into the greased pie dish and gently shake to evenly distribute.
  • Bake in the center of the preheated oven for 45 to 55 minutes until the cake is golden brown and a wooden skewer inserted in the center comes out clean.
  • Allow to cool until it reaches a warm or room temperature before adding garnishes and serving.
