Make irresistible Haitian beef patties with homemade puff pastry for crowd-pleasing party snacks.
Ingredients:
  • 3 cups all-purpose flour
  • 1 cup cold water
  • 1 cup vegetable shortening
  • 2 shallots, chopped
  • 2 teaspoons chopped fresh parsley
  • 1 clove garlic, chopped
  • 1 pinch chile powder, or to taste
  • 1 pound ground beef
  • 1 onion, diced
  • 1 tablespoon beef broth
  • 1 egg yolk, beaten
Instructions:
  • In a large bowl, create a well in the center of the flour. Pour in water and salt. Gently combine with a wooden spoon until dough forms. Cover with plastic wrap and refrigerate for 30 minutes.
  • Combine shortening and butter in a small bowl.
  • Place the dough on a flat surface and roll it out into a 1/4-inch thick rectangle. Spread half of the shortening mixture over the top. Fold one side of the rectangle into the center, then spread the rest of the shortening on top. Fold the other side over the first like a letter. Roll the dough back into a 1/4-inch-thick rectangle and fold it into thirds. Repeat the rolling and folding process once more.
  • Cover the dough with plastic wrap and refrigerate for 8 hours to overnight.
  • Place a baking pan filled with water on the bottom rack of the oven to create steam. Preheat the oven to 375 degrees F (190 degrees C).
  • Combine the shallots, parsley, garlic, and chile powder in a mortar and pestle, then pound into a flavorful paste.
  • Prepare your skillet by heating it over medium heat. Brown the beef by cooking and stirring for about 5 minutes. Add shallot paste, onion, and beef broth. Cook while covered, stirring constantly, until the juices are absorbed, for about 10 minutes. Allow it to cool for 5 minutes before serving.
  • Roll the chilled dough into a 1/2-inch thick rectangle. Cut it into 2 1/2-inch circles. Add 1 1/3 tablespoons of the beef mixture to one side of each circle. Fold over and gently press the edges to seal.
  • Place the filled patties on a baking sheet and generously brush the tops and edges with egg yolk.
  • Bake in the preheated oven until puffy for about 30 minutes. Then, lower the oven temperature to 300 degrees F (150 degrees C) and continue baking until golden brown, about 20 minutes.
