Bake savory Haitian rolls using whole wheat flour for added fiber.
Ingredients:
  • 0.75 cup warm water
  • 2 tablespoons brown sugar
  • 0.75 teaspoon active dry yeast
  • 1.3333333730698 cups all-purpose flour
  • 1 cup whole wheat flour
  • 3 tablespoons shortening
  • 2 teaspoons vegetable oil, divided
Instructions:
  • Combine water and brown sugar in a small bowl. Sprinkle yeast evenly over the surface. Cover with a clean cloth and let sit for about 7 minutes until yeast softens and forms a creamy foam.
  • Combine all-purpose flour, whole wheat flour, shortening, and salt in a large bowl until the shortening is fully mixed in. Add the yeast mixture and mix by hand or with a wooden spoon until the dough forms.
  • Sprinkle flour on a clean surface. Knead dough until smooth and firm.
  • Prepare a generously oiled large bowl using 1 teaspoon of vegetable oil and add the dough, ensuring it is evenly coated with oil. Cover with a clean cloth and allow the dough to rise until doubled in size, approximately 35 minutes.
  • Gently press dough to deflate, then dust work surface with flour. Roll dough out to 1/3-inch thickness, fold in half, and roll out again. Repeat 4 times.
  • Fill a large baking pan with a 1-inch layer of water, then place it on the bottom rack of the oven. Preheat the oven to 350°F (175°C).
  • Grease a jelly roll pan with a delicate touch of 1 teaspoon vegetable oil. Cut the dough into 9 pieces and arrange them on the pan. Cover with a fresh, damp cloth and allow to rise until fluffy, approximately 25 minutes.
  • Bake in the oven above the water until the top is golden brown, for 15 to 20 minutes.
