Crispy Haitian fried chicken marinated in zesty citrus, aromatic spices, and garlic, no batter needed.
Ingredients:
  • 3 pounds chicken legs
  • 1 cup lemon juice
  • 0.5 white onion, chopped
  • 1 head garlic, cloves separated and minced
  • 3 tablespoons seasoned salt
  • 3 tablespoons paprika
  • 3 tablespoons ground thyme
  • 2 tablespoons ground black pepper
  • 2 tablespoons whole cloves
  • vegetable oil for frying
Instructions:
  • In a large bowl, mix chicken legs with lemon juice, onion, garlic, seasoned salt, paprika, thyme, pepper, and cloves. Cover and refrigerate for at least 30 minutes or up to 12 hours to marinate.
  • Heat oil in a deep fryer or large saucepan over medium-high heat until hot. Fry chicken in batches until beautifully golden, approximately 8 minutes. Use an instant-read thermometer near the bone - it should reach 165 degrees F (74 degrees C). Drain on paper towels before serving.
