Get into the Halloween spirit with spooky cupcakes that will impress all your guests.
Ingredients:
  • 185g plain flour
  • 220g caster sugar
  • 50g cocoa powder
  • 3.00 gm baking powder
  • 250ml buttermilk
  • 1 egg, lightly beaten
  • 80ml sunflower oil
  • 4.40 gm vanilla extract
  • Black ready-made icing
  • Silver cachous (optional), to decorate
  • 480g icing sugar, sifted
  • 100g unsalted butter, softened
  • 60ml milk
  • A few drops of orange food colouring
Instructions:
  • Preheat your oven to 180°C and prepare a muffin pan by lining 10 holes with paper cases.
  • Combine the flour, sugar, cocoa, baking powder, and 1/2 teaspoon of salt in a bowl, sifting them together.
  • In a separate bowl, vigorously whisk together buttermilk, egg, oil, and vanilla. Gently fold this mixture into the dry ingredients until thoroughly combined.
  • Fill muffin cases with batter and bake for 25 minutes or until a skewer inserted in the center comes out clean. Allow to cool briefly before transferring to a rack to cool completely.
  • In a food processor or electric mixer, combine the sugar, butter, and milk, beating until smooth. Gradually add the food coloring drops until you achieve your desired color.
  • Roll out the black icing on a sheet of baking paper, use a small cutter to create decorative shapes (such as a cat), and press in cachous to make eyes for added flair.
  • Smooth a generous amount of vibrant orange icing on the cakes, followed by meticulously decorating them with whimsical icing shapes.
