Spooky Halloween mini cheesecakes - sugar cookie crust with creamy no-bake cheesecake filling.
Ingredients:
  • 1 (16 ounce) package refrigerated ready-to-bake sugar cookies dough, such as Pilsbury™Ready to Bake!™ Sugar Cookie Dough
  • 1 (24 ounce) container Philadelphia No Bake Cheesecake filling, softened
  • Halloween themed toppings (such as spooky eyes, candy pumpkins, candy corn)
  • Colorful icing
  • Colorful sprinkles
Instructions:
  • Preheat the oven to 350°F (180°C) and prepare a cupcake pan with paper liners.
  • Place a cookie dough piece in each cupcake liner.
  • After just 12 minutes in the preheated oven, transfer the dish to a wire rack to cool.
  • Whip the no bake cheesecake filling until it's fluffy. Using a disposable piping bag or spoon, top each cooled cookie with the cheesecake mixture up to the middle of the cupcake liner. Gently press down with a spoon to make sure there are no air pockets.
  • Chill for 15 minutes until firm.
  • Fill a petite bowl with toppings or candy. Drench with Halloween themed toppings, candy, icing, and sprinkles. Unwrap from cupcake liners and savor!
