Golden haloumi and pea fritters paired with a vibrant tomato salad for a satisfying meal.
Ingredients:
  • 240g pea
  • 250g Brand Haloumi, coarsely grated
  • 2 Free Range Eggs, lightly whisked
  • 75g self-raising flour
  • 80ml milk
  • 350g mixed medley tomatoes, halved or thinly sliced
  • 1 red onion, thinly sliced
  • 250.00 ml mint leaves, coarsely shredded
  • 40.00 ml pine nuts, toasted
  • 20.00 ml red wine vinegar
  • Greek-style yoghurt, to serve
Instructions:
  • In a bowl, mash the peas with a fork until coarsely crushed. Stir in the haloumi and egg, then add the flour and milk. Mix until well combined, and season to taste.
  • In a frying pan over medium heat, heat 2 tablespoons of oil. Pour 3 portions of 1/4 cup each of the pea mixture into the pan, allowing space for spreading. Cook until golden, about 2 minutes. Flip and cook for another 2 minutes or until golden and cooked through. Transfer to a plate lined with paper towel and cover with foil to keep warm. Repeat with the remaining pea mixture in 3 more batches.
  • In a bowl, mix together the tomato, onion, mint, and pine nuts. Add the vinegar and remaining oil, then season to taste. Toss everything together until well combined.
  • Plate the fritters and salad, then garnish with yogurt and lemon wedges before serving.
