Haloumi patties with red onion and beetroot salad

Speedy, nutritious vegetarian meal perfect for the family.
Ingredients:
  • 400g can chickpeas
  • 1 small red onion
  • 1 clove garlic
  • 250g haloumi
  • 50g parmesan
  • 1 lemon (see Notes)
  • 3 eggs
  • 1 bunch mint
  • 1 bunch flat-leaf parsley
  • 1 1/2 tsp fennel seeds
  • 50g (1/3 cup) sunflower seeds
  • 100g (1 1/3 cups) panko (Japanese) breadcrumbs (see Notes)
  • Vegetable oil, to shallow-fry
  • 1 (about 220g) beetroot
  • 60ml (1/4 cup) olive oil
  • Tamar Valley Greek Style Yoghurt, to serve
Instructions:
  • Preheat the oven to 180C. Drain and rinse chickpeas. Place in a food processor. Peel half an onion and half of the garlic, quarter the remaining onion and garlic, and add to the chickpeas. Grate the cheeses into the mixture. Zest lemon over and add 1 egg. Tear off half of the herb leaves and add to the mixture, saving the rest for the salad. Process the mixture until coarse, then shape it into 8 patties.
  • - Slice the remaining onion thinly, then soak in a bowl filled with water and 1 teaspoon of salt before refrigerating it. - Coarsely chop fennel seeds and mix them with breadcrumbs in a separate bowl. - Beat the remaining 2 eggs in another bowl. - Dip patties in the beaten eggs, then coat them in the breadcrumb mixture and arrange them on a baking paper-lined tray.
  • In a frying pan over medium heat, sizzle the patties in vegetable oil until golden on both sides, about 3 minutes each. Keep them warm in the oven on a baking paper-lined tray. Repeat with remaining patties.
  • Drain the onion and transfer it to a bowl. Tear the herbs and mix with the onion. Put on rubber gloves to peel the beetroot with a vegetable peeler, then shave it into the bowl. Squeeze lemon juice over the mixture, add olive oil, season well, and gently toss to combine.
  • Plate the patties evenly, generously top them with vibrant beetroot salad, and serve alongside a dollop of creamy yogurt.
