Elevate sliced ham with a cheesy potato pastry pie. Stuffed with melted camembert, this festive main dish combines sour cream, potatoes, and dijon for a rich and satisfying flavor experience. Perfect for a budget-friendly and delicious Christmas feast.
Ingredients:
  • 300g desiree potatoes, peeled, cut into 3cm pieces
  • 400g leg ham, cut into 2cm pieces
  • 200g camembert, cut into small wedges
  • 1 ⁄250.00 ml chopped fresh chives
  • 125g (1 ⁄2 cup) sour cream
  • 11.80 gm Dijon mustard
  • 10 filo pastry sheets
  • 80g butter, melted
  • 12.00 gm sesame seeds
  • 300g tomato medley mix, halved
  • Fresh continental parsley leaves, to serve
  • 18.20 gm lemon-infused olive oil (see tip)
Instructions:
  • Preheat your oven to 220C/200C fan forced. Boil the potato in plenty of cold water until just tender, about 10-15 minutes. Drain and allow it to cool in a heatproof bowl.
  • Combine the ham, camembert, chives, sour cream, and mustard in a bowl. Season with your favorite spices, then mix everything together until well combined.
  • Gently oil a 22cm (base size) round fluted tart tin with a removable base.
  • Lay the filo sheet on a clean work surface. Cover with a dry tea towel followed by a damp tea towel to keep it moist. Brush the filo sheet lightly with butter, then fold in half. Drape it over the base and up the sides of the tin, letting it hang over the edge. Repeat with the rest of the filo and most of the butter, layering the sheets until the base and sides of the tin are fully covered.
  • Fill the filo case with the ham mixture, then fold over the overhanging filo to seal in the filling. Brush with remaining butter, sprinkle with sesame seeds, and bake for 25-30 minutes until golden. Let it cool in the pan for 10 minutes before serving.
  • Place the tart on a serving plate and garnish with tomato and parsley. Season to taste and finish by drizzling with the aromatic infused oil. Serve and enjoy.
