Ham, corn and Swiss cheese quiches

These bite-sized quiches are perfect for a satisfying lunch.
Ingredients:
  • 3 sheets frozen ready-rolled shortcrust pastry, thawed
  • 75g ham, finely chopped
  • 75g can corn kernels, drained
  • 30g (1/4 cup) grated Swiss cheese
  • 2 tsp chopped chives
  • 3 eggs, lightly beaten
  • 80ml (1/3 cup) cream
  • salt and cracked black pepper
Instructions:
  • Preheat the oven to 170°C. Grease a 12-hole patty pan. Use a 12cm-diameter round pastry cutter to cut out 12 circles from the pastry. Press the pastry circles into the greased pan, ensuring they fit snugly. Chill in the refrigerator for 15 minutes before continuing.
  • In a medium bowl, mix together the ham, corn, cheese, chives, eggs, cream, salt, and pepper. Spread the mixture evenly over the chilled pastry. Bake for 20 minutes or until golden. Serve warm or at room temperature.
