Delicious and simple pies, ideal for quick meals, snacks, and outdoor gatherings.
Ingredients:
  • 1 sheet (25 x 25cm) frozen ready-rolled shortcrust pastry
  • 80g (1/3 cup) ricotta
  • 125.00 ml chopped ham
  • 2 small shallots
  • 20g (1/4 cup) finely grated parmesan
Instructions:
  • Preheat the oven to 200°C. Cut one 25 x 25cm sheet of frozen ready-rolled shortcrust pastry, just thawed, into quarters and gently mold each square into four 200ml-capacity muffin pans.
  • Divide the ricotta (80g or 1/3 cup), chopped ham (1/2 cup), and finely chopped shallots (2 small) among the pastry cases. In a small bowl, combine the lightly whisked eggs (4), finely grated parmesan (20g or 1/4 cup), and season with pepper. Divide this mixture evenly among the pastry cases.
  • Bake for 15 minutes or until the filling is set. Carefully transfer the pies from the muffin pans to a baking tray. Bake for an additional 5 minutes or until the bases are crisp. Enjoy the warm pies with mixed salad leaves for a light meal or pack them cold for a lunch box treat.
