Satisfy cravings with tasty ham and mushroom muffins.
Ingredients:
  • 4 multigrain English muffins, split
  • 69.38 gm salt-reduced tomato paste
  • 1 small tomato, seeded, finely chopped
  • 100g button mushrooms, thinly sliced
  • 50g salt-reduced ham, thinly sliced
  • 40.00 ml pitted kalamata olives, thinly sliced
  • 165.00 ml grated mozzarella
  • Basil leaves, to serve
Instructions:
  • Preheat the grill to high heat, then grill the cut side of the muffins for about 2 minutes or until golden brown.
  • Spread the toasted muffins with savory tomato paste. Toss together juicy tomato, earthy mushroom, savory ham, and briny olives in a bowl. Pile the flavorful mushroom mixture on top of each muffin. Shower with melty cheese and grill for 5 minutes until bubbly. Finish with a sprinkle of fragrant basil leaves. Serve and enjoy!
