Elevate Christmas ham leftovers with this delicious leftover makeover.
Ingredients:
  • 2 eggs, lightly whisked
  • 150g self-raising flour
  • 125ml milk
  • 250.00 ml chopped ham
  • 150g pea
  • Mixed salad leaves, to serve
  • 1 ripe avocado, finely chopped
  • 1 ripe tomato, seeded, finely chopped
  • 1 long green chilli, seeded, finely chopped
  • 1/2 red onion, finely chopped
  • 21.00 gm lime juice
Instructions:
  • In a mixing bowl, whisk together eggs and flour until well combined. Slowly pour in the milk while continuing to whisk until a silky batter forms. Season with salt and pepper for flavor. Gently fold in the ham and peas until evenly distributed throughout the batter.
  • In a large frying pan over medium heat, heat a splash of oil. Pour four 1/4-cup portions of batter into the pan, leaving space for spreading. Cook for 2-3 minutes until golden underneath and bubbles form on the surface. Flip and cook for 1-2 more minutes until fully cooked. Transfer to a plate and cover with foil. Repeat with the rest of the batter and oil in a separate batch.
  • In a medium bowl, mix all the ingredients for the salsa, then taste and adjust seasoning as needed.
  • Transfer the fritters to plates, generously spoon salsa over them, and serve alongside a fresh mixed salad for a delightful meal.
