Ham and pea tart

Make a delicious tart with buttery crust filled with creamy mixture of ham, peas, spring onion, and fetta - perfect for the whole family.
Ingredients:
  • 2 sheets shortcrust pastry
  • 200g sliced Half Leg Ham, torn
  • 60g pea
  • 1 spring onion, sliced
  • 100g Brand Australian Fetta
  • 60ml thickened cream
  • 4 Free Range Eggs
  • 62.50 ml loosely packed flat-leaf parsley leaves
  • 62.50 ml loosely packed mint leaves
  • 62.50 ml loosely packed coriander leaves
  • 9.20 gm olive oil
  • 1 tsp white wine vinegar
Instructions:
  • Preheat your oven to 220C and generously grease an 11cm x 33cm rectangular fluted tart tin with a removable base.
  • Overlap and press together 2 pastry sheets to form a long edge. Line the tin, trim the edges, then fill with pastry weights or rice. Bake for 8 minutes, remove paper and weights. Bake for an additional 8 minutes until golden brown.
  • Lower the oven temperature to 180C. Sprinkle the ham, peas, spring onion, and feta over the tart case.
  • In a large jug, whisk together cream, eggs, and garlic. Season with salt and pepper. Pour the mixture into the tart case and bake for 25-30 minutes, or until the filling is golden and set.
  • In a small bowl, mix together the parsley, mint, coriander, oil, and vinegar.
  • Garnish the tart with a fresh herb salad and slice before serving.
