Creamy ham and pea pasta with Parmesan - a delicious way to use up leftover ham!
Ingredients:
  • 3/4 pound fusili pasta
  • Salt
  • 2 Tbsp butter
  • 3 garlic cloves, minced (about 1 Tbsp)
  • 1 1/2 cups diced ham
  • 1 1/2 cups frozen peas
  • 1/2 cup cream
  • 1 cup of pasta cooking water (reserved from cooking the pasta)
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon kosher salt
  • 3/4 teaspoon black pepper
  • 1/2 teaspoon lemon zest
Instructions:
  • Prepare the pasta: Bring a large pot of generously salted water to a boil. Add the pasta and cook until al dente, retaining 1 cup of pasta cooking water before draining.
  • Melt butter in a skillet over medium heat. Sauté garlic, then add ham and peas while you cook the pasta.
  • Prepare the sauce by adding pasta water, cream, Parmesan cheese, lemon zest, salt, and pepper. Pour 1 cup of the pasta cooking water to help thaw the peas, and then mix in 1/2 cup of cream, Parmesan cheese, salt, pepper, and lemon zest.
  • Combine the cooked pasta with the sauce in a serving bowl and enjoy!
