Kid-friendly fritters - fun to make!
Ingredients:
  • 200g (1 1/4 cups) fresh peas
  • 100g (1 cup) diced leg ham
  • 1/2 red onion, thinly sliced
  • 225g (1 1/2 cups) self-raising flour
  • 250ml (1 cup) milk
  • 1 egg, lightly whisked
  • Salt & freshly ground black pepper
  • 27.30 gm olive oil
Instructions:
  • In a large bowl, sift the flour and create a well in the center. In a separate jug, whisk together the milk and eggs. Slowly whisk the milk mixture into the flour until combined. Season with salt and pepper to taste.
  • In a medium saucepan, boil peas in salted water for 5 minutes until they are bright green and tender. Drain and then cool them under cold running water.
  • Combine ham, onion, and half of the peas into the fritter batter. Mash the rest of the peas in a bowl and fold into the mixture. Gently mix until incorporated.
  • In a large frying pan over medium-high heat, heat 2 teaspoons of oil. Spoon 2 tablespoons of the fritter batter into the pan, making sure to space 5cm apart. Cook for 3 minutes until golden underneath and bubbles form on the surface. Flip and cook for another 3 minutes until fully cooked. Transfer to a warm plate, cover with foil to keep warm. Repeat with remaining batter and oil in 2 more batches to make a total of 12 fritters.
