Try this gourmet ham hock and pea fritter for a delicious twist on a classic favorite.
Ingredients:
  • 125.00 ml plain flour
  • 2.00 gm baking powder
  • 1 egg
  • 82.50 gm water
  • 125.00 gm creme fraiche
  • 23.40 gm seeded mustard
  • 40.00 ml fresh flat-leaf parsley, chopped
  • 900g ham hock
  • 187.50 ml frozen peas
  • White pepper, to season
  • 36.40 gm extra virgin olive oil
Instructions:
  • Mix together the creme fraiche, seeded mustard, and parsley in a bowl, cover, and chill in the fridge until needed.
  • Gently cook a 900g ham hock for 2 1/2 hours until it becomes tender. Let it cool for a bit, then separate the ham and give it a coarse chop.
  • Combine flour and baking powder, then create a well in the center. Crack in the egg and gradually whisk in water until a smooth batter forms. Gently stir in ham, frozen peas, and a pinch of white pepper.
  • In a large non-stick frying pan over high heat, heat extra virgin olive oil. Cook 2 tablespoonfuls of batter in 2 batches for 2 minutes on each side. Sprinkle with parsley and serve with creme fraiche mixture.
