Ham and zucchini pikelets

Savor nutritious ham and zucchini pikelets for a guilt-free treat.
Ingredients:
  • 150.00 gm wholemeal self-raising flour
  • 75.00 gm self-raising flour, sifted
  • 62.50 ml reduced-fat grated tasty cheese
  • 1 medium zucchini, grated
  • 70g leg ham
  • 321.88 gm skim milk
  • 2 eggs, lightly beaten
  • Olive oil cooking spray
  • 125.00 ml plain low-fat yoghurt
  • 20.00 ml finely chopped fresh chives
Instructions:
  • In a large bowl, mix together the flours and cheese. Create a well in the center. In a large jug, combine zucchini, ham, milk, and eggs. Pour the egg mixture into the flour mixture and stir until well combined.
  • Coat a non-stick frying pan with oil spray and heat over medium heat. Spoon 1 heaped tablespoon of batter into the pan to make 6 pikelets. Cook for 2 to 3 minutes until bubbles form on the surface, then flip and cook for 1 to 2 minutes until golden and cooked through. Transfer to a wire rack to cool. Repeat with the rest of the batter to yield 24 pikelets.
  • In a small bowl, mix together yoghurt and chives until well combined. Serve the pikelets with the creamy chive yoghurt topping.
