Ham and cheese croissant zucchini slice recipe

Delicious zucchini, ham, and cheese croissant slice.
Ingredients:
  • 2 x 190g pkt (8 small) all-butter croissants
  • 200g mozzarella, thinly sliced
  • 150g sliced leg ham
  • 4 zucchini, 2 shredded into long thin strips, 2 coarsely grated
  • 6 eggs, lightly whisked
  • 150g (1 cup) self-raising flour
  • 80g (1 cup) coarsely grated cheddar
  • 40.00 ml finely chopped fresh chives
Instructions:
  • Preheat your oven to 180°C/160°C fan forced. Grease an 18 x 28cm ovenproof dish that is 5cm deep and line the base and sides with baking paper, making sure to let the paper hang over the long sides.
  • Carefully split the croissants in half horizontally, leaving them connected. Fill each croissant with mozzarella, ham, and shredded zucchini. Gently fold the croissants back together to seal the delicious filling inside.
  • In a spacious bowl, combine whisked eggs and flour. Mix in grated zucchini, cheddar, and chives. Season with herbs and blend everything together until well combined.
  • - Pour half of the egg mixture into the dish, ensuring even coverage. - Stand the croissants upright in the dish, slightly tilted, and pour the remaining egg mixture in between. - Bake for 30-35 minutes or until set, covering with foil if needed. - Season to taste and enjoy!
